Philippine ube finds sweeter market in Japan

Philippine ube is making a deeper mark in Japan, where its vivid purple color and distinctive flavor are turning the humble root crop into an increasingly versatile ingredient for chefs, cafés, and food makers.

Japan is already the Philippines’ second-largest export market for ube, according to Agriculture Attaché Maria Alilia Maghirang of the Philippine Embassy in Japan. The growing appetite could give Philippine farmers and exporters more room to expand shipments and move into higher-value food products.

The latest showcase came at the Philippines Fair at SONOKO Café Ginza on Aug. 6, where ube took center stage in a menu designed for Japanese consumers.

The café worked the purple yam into an eclectic lineup that included halo-halo, Mont Blanc, curry, potato sandwiches, tarako cream pasta, banana amasake smoothies, and milk cocktails. The menu will be available until Aug. 31.

Ube may have started life as a familiar Filipino dessert staple, but Japan’s chefs appear willing to let it roam. From pastries to pasta, the purple yam is proving that it does not intend to stay in one culinary lane.

The Philippine Embassy said the fair forms part of celebrations marking the 70th anniversary of the normalization of diplomatic relations between the Philippines and Japan. It also aims to introduce Japanese consumers to the global ube trend.

Ambassador Mylene Garcia-Albano said ube’s striking color and earthy sweetness have attracted chefs, food enthusiasts, and cafés around the world, giving the Philippine crop a growing role in contemporary cuisine.

For Philippine agriculture, the opportunity goes beyond selling more raw ube. Stronger demand in Japan could encourage exporters to develop processed products for the pastry, dessert, and beverage markets, where branding and preparation can add considerably more value.

Japan’s interest also offers a useful lesson in agricultural exports. Sometimes, expanding a market does not require inventing a new crop. It can simply mean giving an old favorite a fresh purple makeover.
